BANANA PANKI
INGREDIENTS:
6 raw bananas
50 grams arrowroot (corn meal) 1/2-cup
coriander leaves
2-tbsp. green chilly paste, salt 1-tbsp.
cumin seeds
1/2-cup plain yogurt 2-tbsp. lemon juice
banana leaves.
PREPARATION:
Boil the bananas in a pressure
cooker. Remove the skin and mash them. Mix plain yogurt, cumin
seeds, salt, green chilly paste. Mix well. Add arrowroot (corn
meal). Make into a fine batter. Add coriander leaves and lemon
juice. Beat the batter.
Wash banana leaves. Dry and spread
oil on the leaves. Spread the batter over it.
Steam this panki until cooked.
Serve warm with sauce and chutney.
