BANANA VADA
INGREDIENTS
500 grams bananas 100 grams peas
100 grams parched rice (poha) 2-cup chana dal
flour
1-cup coriander leaves 1/2-tbsp. lemon juice
2-tsp. garam masala 3 tbsp. green chilly
paste
1-tbsp. sugar, salt 2-tbsp. red chilly powder
salt 1/2-tsp. turmeric powder
1-tsp. mustard seeds
1-tsp. urad dal, a few curry leaves oil for
frying
PREPARATION:
Boil peas and banana in a pressure
cooker. Peel and mash banana. Mix peas.
Soak parched rice for 1/2 hour.
Take a frying pan and heat a little oil. Saut� urad dal and when it
turns red, add mustard seeds. When they crackle, add curry leaves,
turmeric powder, chilly paste. Mix this with the mashed bananas. Mix
salt, lemon juice, sugar, garam masala and coriander leaves. Divide
the mixture into equal parts.
Shift chana dal flour. Add salt,
turmeric powder and red chilly powder. Mix water to from a batter.
Dip banana mixture in the batter and fry in oil. Serve with
coriander chutney or tamarind-date chutney.
