MEXICAN PULAV
INGREDIENTS:
1-cup Basmati rice
¾
cup whole sprouted green chanas ¼ cup green peas
½
bunch spinach (tandarja bhaji) ¼ cup fine chopped cabbage
200
grams fried paneer pieces 2-tbsp. oil
1
lemon juice.
Ground nut sauce:
1-cup roasted peanuts 2-tbsp. brown sugar
salt
1-cup water
½
tbsp. red chili powder
For the decoration:
5-7
fried papads.
PREPARATION:
Wash
and soak the rice in cold water for 2 hours. Boil the water in a pot
and add the rice. Cook the rice and then spread in a plate.
Boil
sprouted chana, peas and leaves. Keep aside.
In a
frying pan, heat oil. Add cabbage and stir for 5 minutes. Mix cooked
rice, boiled vegetables, paneer pieces and salt. Mix well.
Crush the roasted peanut. Add water and churn for 2 minutes. Cook on
a low heat and add brown sugar, salt and red chili powder. Boil for
2 minutes and remove from the heat.
Serve rice in an oval plate. Mix peanut sauce and lemon juice.
Decorate with the crushed papads.
