GOLDEN CHIRSTMAS CAKE
100 grams dried apricots 100 grams marzipan
175 grams butter 175 grams caster sugar
100 grams walnuts 1/2-cup orange juice
225 grams sultans or currants 225 grams all-purpose flour
2-tsp. Baking powder 1 tsp. Soda
2-tsp. Ground cinnamon 1/2 tin condensed milk
Shift all-purpose flour, banking powder, soda and cinnamon powder.
Dissolve apricots in boiling water for 3-4 hours. Divide them into 4. Roll the marzipan into marble -sized balls. Cream the butter and sugar until light and fluffy. Mix condensed milk and flour and beat. Mix apricots, walnuts, sultans and orange juice. Mix well and put in the greased and dusted tray. Bake in the center of the oven for 1 hour at 300 f. Remove the cake and cool. First apply the almond paste and then decorate as desired.
